With a Caldari Tower, you can run both a simple and a complex reaction. For this you need to use up most of the CPU if you want to empty it every 40 hours (daily basically). (1 silo on the end). If you use up 100% of the CPU you can get yourself down to emptying every 80 hours. (3 days basically). If you had exactly the right moons or were importing the materials you could do the whole reaction set with just 2 large towers. Giving you the best profit margin. However if you are using up all the CPU you won't have any left for warp disruptors or webbers and leave the tower fairly vunerable to attack when you're not around.
With Gallente towers you get a 100% silo bonus, but you have less CPU. You don't have enough to both a simple and a complex reaction on the same tower. However you can do a complex reaction, and have an extra moon miner + silo, and enough output silos so that you only need to empty silos every 8 days 8 hours (less often actually for the complex towers) You will also have spare CPU and more grid for defense. With your third tower you will run both simple reactions and fit 8 days 8 hours worth in the end, with still more CPU for defense.
For the 3 Gallente towers you don't need the right moons (only the right one for the simple reaction). And if you do get the right moons you can possibly mine an additional 1-2 materials in addition to your reaction.
With the Gallente you can get between a complex reaction and a complex reaction + 2 minerals. From 3 large towers.
With the Caldari you can get between a complex reaction with 2 large Towers, or a complex with 2 large + a small.
With the Gallente you have spare CPU and more grid for defense.
With the Caldari it is cheaper (less towers = less fuel).
However with the Gallente you only need to attend to it once a week, which means that you can do more with less effort (I once ran 32 towers, half of them large, alone, across 3 0.0 regions). If I needed to empty silos daily, or even every 3 days it would have driven me nuts. But it was doable, given that I only needed to attend to the towers once per week.
Both options are really valid and have advantages and disadvantages. Personally I prefer the lower margin higher througput+less effort. Rather than the maximum margin but maximum pain in the ass + risk method.
